Vanilla Cake with
Chocolate coffee icing

Called tuulomantorttu in Finnish, this vanilla cake with chocolate-coffee icing and traditionally sprinkled with coconut, though it can be swapped out for ground walnuts or almonds, or even sprinkles for a festive look!

Ingredients:

For the cake:

  • 10 tbsp butter
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup milk

For the icing:

  • 4 tbsp butter
  • 4 tbsp coffee
  • 1 tbsp cocoa powder
  • 2 cups powdered sugar

For Garnish

  • Coconut flakes, ground nuts, or sprinkles

Instructions:

For the Cake:

  1. Melt 10 tbsp butter and let it cool.
  2. Prepare 13×9 pan by spraying, covering with parchment and spray again.
  3. Sift the flour and baking poweder into a separate bowl.
  4. Beat the eggs and sugar until light and fluffy, about 3 minutes.
  5. Add vanilla.
  6. Alternate mixing dry ingredients and milk into the dough, starting with flour, then milk, doing flour in 3 additions, milk in 2 additions.
  7. Finally, add the melted butter.
  8. Spread the dough on pan.
  9. Bake at 350°F for a bout 25 minutes.

For the Icing:

  1. While the cake is in the oven, melt the butter.
  2. Add coffee, cocoa powder and powdered sugar. Mix until smooth.
  3. Spread the icing on the surface of the cake immediately after taking it out of the oven.
  4. Immediately sprinkle with coconut flakes, nuts, or sprinkles for decoration.
  5. Once cooled, cut the cake, serve and enjoy!
