Vanilla Cake with
Chocolate coffee icing

Called tuulomantorttu in Finnish, this vanilla cake with chocolate-coffee icing and traditionally sprinkled with coconut, though it can be swapped out for ground walnuts or almonds, or even sprinkles for a festive look!
Ingredients:
For the cake:
- 10 tbsp butter
- 2 cups all purpose flour
- 2 tsp baking powder
- 1 tsp vanilla
- 2 eggs
- 3/4 cup sugar
- 1/2 cup milk
For the icing:
- 4 tbsp butter
- 4 tbsp coffee
- 1 tbsp cocoa powder
- 2 cups powdered sugar
For Garnish
- Coconut flakes, ground nuts, or sprinkles
Instructions:
For the Cake:
- Melt 10 tbsp butter and let it cool.
- Prepare 13×9 pan by spraying, covering with parchment and spray again.
- Sift the flour and baking poweder into a separate bowl.
- Beat the eggs and sugar until light and fluffy, about 3 minutes.
- Add vanilla.
- Alternate mixing dry ingredients and milk into the dough, starting with flour, then milk, doing flour in 3 additions, milk in 2 additions.
- Finally, add the melted butter.
- Spread the dough on pan.
- Bake at 350°F for a bout 25 minutes.
For the Icing:
- While the cake is in the oven, melt the butter.
- Add coffee, cocoa powder and powdered sugar. Mix until smooth.
- Spread the icing on the surface of the cake immediately after taking it out of the oven.
- Immediately sprinkle with coconut flakes, nuts, or sprinkles for decoration.
- Once cooled, cut the cake, serve and enjoy!
